Eats ‘n’ Treats: Irish Soda Bread

Welcome back to the latest edition of Eats n Treats! Keeping the St Patty’s Day spirit throughout the month, today’s recipe is for IRISH SODA BREAD (If you’d like to look at more amazing recipes, please feel free to check out allrecipes.com).

•This recipe will take a total of 1 hour and 15 minutes, containing only 172 calories, 8 grams of fat, 23 grams of carbs, and 4 grams of protein.

•For today’s recipe you will need:

4 cups of flour, ½ cup of margarine (softened), 4 tablespoons of white sugar, 1 teaspoon of

baking soda, 1 tablespoon of baking powder, ½ teaspoon of salt, 1 cup of buttermilk, 1 egg;

•Separately, you need a brush mixture of  ¼ stick of melted butter and ¼ cup of buttermilk. In 4 easy steps you’ll have yourself a springy loaf waiting for you and your foodies to enjoy.

STEP 1

Lightly grease a large baking sheet and preheat your oven to 375 degrees F

STEP 2

Grab a large bowl and mix in the flour, softened margarine, sugar, baking soda, baking powder, and salt. Stir in 1 cup of buttermilk and egg. Take the dough out of the bowl. Create a lightly floured surface and knead slightly. Form the dough into a circle and place into your greased baking sheet.

STEP 3

Combine your separate ¼ cup of buttermilk with your melted butter in a separate small bow. Brush your loaf with the mixture then cut an X on top of your loaf.

STEP 4

Place the loaf in your preheated oven for 45 to 50 minutes, once the time is up let the round cool for 10 to 30 minutes. While the bread is baking you should use your mixture to brush over it while in the oven.

And voila! your tasty soda bread is done and you are ready for your St. Patrick’s Day festivities.

Making Chocolate Dipped Strawberries for Valentine’s Day

If you want to make a simple & special treat for Valentine’s Day, here is what you need:

  • Strawberries
  • Chocolate bar or chocolate chips
  • A bowl

How to make it:

  1. Warm the chocolate in a bowl by putting it in the microwave for 2 minutes, or until it is melted and hot. Stir it every once in a while so it doesn’t stick to the bowl.
  2. While the chocolate is melting, wash the strawberries and tap them with a paper towel to dry them. They need to be very dry for the chocolate to stick.
  3. The chocolate needs to be hot and should be good to dip the strawberries in, quickly one-by-one.
  4. Put the chocolate-dipped strawberries on a plate with wax paper and decorate them with sprinkles if you want to.
  5. Put the strawberries in the fridge for a day to get the chocolate shell nice and firm before you eat them.
  6. Enjoy!

Eats & Treats: Homemade Cookies for the Holidays

With the holiday season approaching, the mouthwatering desserts catch my attention! Brownies, cookies, pies… the more the merrier! Here’s a delicious Christmas cookie recipe you can make at home.

CHRISTMAS M&M COOKIES

For this recipe you will need…

  • 1 and ½ cups of flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tsp cornstarch 
  • 1 cup red and green M&Ms
  • ½ cup room temperature butter
  • ¼ cup white sugar
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg

Follow these quick and easy directions for the tasty cookies!

Step 1) In a bowl, cream together the sugars and room temperature butter until fluffy and light. 

Step 2) Next, mix in the vanilla extract and the egg. 

Step 3) Once everything is mixed, pour in the dry ingredients and the M&Ms, and mix until everything is combined. 

Step 4) When finished mixing, put portions of tablespoon sized cookie dough balls onto a baking pan and put them in the freezer for 10 minutes. Preheat the oven to 350 degrees while you are waiting.

Step 5) After 10 minutes, put the pan of cookie dough balls in the oven and bake at 350F for approximately 11 minutes.

Step 6) Eat the cookies and enjoy!

A Treat for Your Valentine: Chocolate Chip Cookies

This Valentine’s Day, treat yourself (and a loved one) to some of the best cookies you’ve ever tried. These cookies could impress any crush, or be a great treat to eat alone. My family has made many memories through this recipe, from highs and lows, and holidays. Here’s what you’ll need:

> 1 ½  Cups Butter (softened)

> 1 Cup Granulated Sugar

> 1 Cup Brown Sugar (packed)

> 2 Eggs (Large)

> 2 Teaspoons Vanilla Extract

> 3 Cups All-Purpose Flour

> 1 Teaspoon Baking Soda

> 1 Teaspoon Salt

> 1 Package (6 Ounces) of Semi-Sweet Chocolate Chips

OPTIONAL:

> 1 Cup Chopped Nuts (Pecans or Walnuts are Preferred)

> Additional Salt for Topping

  1. Preheat oven to 375℉ or 190℃. 
  2. Take Softened Butter, Granulated Sugar, Brown Sugar, Vanilla Extract, and Eggs and mix in a large bowl. Once the mixture is done, it should take on a creamy or fluffy texture.
  3. Once you have creamed those ingredients, add the flour. Do this in increments of three, to fully spread the flour within your wet ingredients. After combining flour with the wet mixture, add the Baking Soda and Salt. Mix until combined.
  4. You’re almost done! Now, add in your Chocolate Chips, and Nuts if preferred. Mix until these ingredients are fully incorporated.
  5. After greasing your cookie sheets, take a big spoon (preferably about a tablespoon) of dough, roll it into a ball using your hands, and place it on the sheet.
  6. Placing them about three inches apart, you should have a total of about six cookies per cookie sheet.
  7. Once the oven is preheated, place cookies onto the middle rack, and bake for about 8-10 minutes, or until you see a golden color around the edges of the cookie.
  8. After baking, immediately add a small sprinkle of salt to the top of each cookie. Let cookies sit, preferably on cooling racks, for about another 8-10 minutes.
  9. Enjoy!
